Friday Afternoon Bacon Blogging — Corn Edition

pa1a02_grilled_corn_medThe farmer’s markets and roadside stands now have local corn, which has to be one of the best things about summer. Just in case you need some inspiration for cooking that corn, next time you are gilling, perhaps Bacon-Wrapped Corn will do the trick. This isn’t an especially outrageous use of bacon — but is certainly a good excuse for including for bacon for dinner! And if you aren’t taking advantage of the local farm stands and farmer’s markets you are missing a great opportunity. Real tomatos, local squashes and local fresh-picked fruit are all on hand here. Many grown with a minimum of chemicals, too. Plus you can probably wrap all of it in bacon to put on the grill!

For those of you allergic to veggies, perhaps you’d be happier with Bacon-Wrapped Corn Dogs. If you do this, let us know how this turns out — I’ll never know what is appealing about a Corn Dog.

  1. Bacon and corn are both delicious foods on their own. However, I find the marriage of the two to be simply irresistible. Pre-diet, I would take a pound of bacon, cook it down and remove the cooked bacon. Then, I would add two bags of frozen corn. Cook the corn IN the bacon fat. I’d grate half-an-onion in this mixture (I like to grate it so you get the flavor, but not huge crunchy onion pieces) and add a little salt and pepper to taste. Add back the cooked bacon and you have a heavenly Southern-style side dish.

    Bacon is definitely “nom nom nom!”

    ps. MM — fried corn! I haven’t had that many years. It is really good, though, as long as you use bacon drippings….

  3. But to your question, yes, I do love wrapping bacon around asparagus and then roasting in the oven. I also do this with some prosciutto di Parma. The bacon or prosciutto gets nice and crispy. Be sure to put the bacon-wrapped goodness on a grate instead of directly on the baking sheet. This will allow the bacon fat to drip below so the bacon crisps rather than get soggy.

    Well yes, but a heavy whore-dwarf (teens around here)…rolled “good” bread, crusts off, wrap 2 asparagus in bacon, sprinkle w/ lemon pepper, wrap up in crustless bread, sesame seed on top if you want, and quick in a 400 oven to toast….cannot make fast enough. And don’t cheat and use those pillsbury crescent things, cause when others in the family try to shortcut it that way, I invariably get the kitchen clean-up kavetch of how so and so’s aren’t like….and I know why!!!!!

    Yum, bacon-wrapped asparagus! Hadn’t thought of that. I think that the local asparagus is out of season, but wow!

    Fichners Farm, two miles west of the Delaware metropolis of Leipsic, has for years brought in the first ripe ear of Silver Queen on the 4th of July. They were two days late this year due to heavy rains, however, the wait is insignificant compared to the quality of this corn. Without any hesitation or qualification, this is the best corn in the world. And don’t roast it. Steam or boil, or scale for creamed corn.

    That’s interesting, Dave M. I’ve had to drive back to Maryland to find Silver Queen corn. But if you are in NCCo, SIW Vegetables on Rt 100 has what they call bicolor corn that really rivals Silver Queen.

  11. We have two great recipes with bacon. We have a recipe with swiss chard, bacon, red onion and red wine vinegar. It’s my favorite recipe!

    We also have another recipe with brussell sprouts, pancetta, brown sugar and vermouth. So good!

    Turkey bacon is the way to go.

    And all of this bacon wrapped corn, bacon wrapped corndogs, etc., reminds me of the deep fried green beans and broccoli at the Wisconsin State Fair.

    At the Minnesota State Fair, fried cheese curds (no bacon) and mini donuts (no bacon) are a big deal. along with Walleye on a Stick and Scotch Eggs AND Meatballs on a Stick. Lots of fried stuff on a stick out there…..

    UI — those are good recipes — I’ve done the brussell sprouts one with no vermouth, no brown sugar and roasted in the oven…..

    I’m not even sure turkey bacon is even turkey, much less bacon… 😉

    The absolute BEST corn is on Old Capitol Trail at Smith’s Produce near Hunter’s Den on the same side of the street.

    Try some fired corn for a treat. 2 T butter in a skillet. Get it real hot then throw in corn shaved from two ears of corn. Let it fry and leave it alone for about 10 minutes. When you can see the corn start to carmelize, add some salt and pepper and toss the corn. Good stuff.

    And don’t forget that state fair staple – pork chop on a stick.

    I forgot this one – one Christmas while visiting my in-laws with my partner, his mother served a baked, boneless chicken breast on a think slice of ham wrapped in bacon. Yeah, I stared at it. And she knew I didn’t eat pork.

    And because of you cassandra my family will be enjoying BLTs again for summer Sunday lunch–and believe me anything done around here twice in a row, gets evaluated for tradition!

    Joanne, I really love BLTs — an excellent garden (or farmer’s market tomato) and good bacon cannot be beat. Can’t eat them very often here, but I do have a couple over the summer. YUM! But since I know if it s tradition now, I’ll know where to drop by for lunch in the summer 😉
