    Wrong! So wrong! Damn. Even a cheap egg and cheese bacon biscuit did me in. But I still won’t eat the box of donuts that ‘Geek fantasizes to be one day!

    looks alright. But not nearly as good as a peanut butter & bacon sandwich, on toast. Lots of bacon, extra crispy

    Well, this is in the ingredients:

    1 ounce pancetta (diced)

    That’s just an insult. One, it’s only an ounce. Two, it gets all fru-fru, saying “pancetta”. I’m a comman man, damnit! Give me bacon, or give me…bacon!

    Cass – I can definitely do that. Still light on the bacon, but I think the combo of flavors is a fine replacement for the lack of bacon.

    Sheepish admission – I will do turkey bacon/burgers, BUT…it’ll still fly in this recipe.

    The thing about the jam is that you can add it to lots of stuff and extend your bacon experience across many meals. Bacon for when you don’t have time to cook it, say. There’s also a more concentrated version which I need to try too.
